Organic Free - Range Chicken:

From the same breed as the "Label Rouge" chicken, the organic corn-fed chicken is raised outdoors for minimum 81 days and fed 100% with vegetable matter consisting of organic seeds (95%) and other natural products (5%).

Tasting notes: A diet of maize gives the meat an intense flavor. It is lean and best roasted or served with a sauce.

Average weight: 1,300g - 1,500g

St. Sever Cockerels:

St. Sever Cockerel

These slow-growing certified "bare neck" cockerels are 65% cereal-fed and raised for 34 days minimum. This is much longer than for standard cockerels (25 days), which results in firmer meat.

The skin is thin and becomes crispy when cooked.

Tasting notes: A diet of maize gives the meat an intense flavor. It is lean and best roasted or served with a sauce.

Presentation: ready-to-cook.

Average weight: 600g (Ideal for a 2 person sharing meal)

 Poulet Marensin (St. Sever)

Breed: "Bare Neck", a slow-growing meat-producing Landais breed

Growing period: in totally freedom, for at least 88 days. 

Diet: At least 80% grain, essentially maize produced by the poultry farmers themselves, but also including soya, alfalfa, vitamins, minerals, as well as plants and insects nibbled in complete liberty in the forest undergrowth ... Starting on the 63rd day, the chickens are fed as much whole grain corn as they want.

Tasting notes: A long growing period gives a very pronounced flavor and firmness to the meat. The chicken's physical activity is responsible for very plump legs and other cuts. The meat is juicy but lean, with low fat content.
